We are looking for a chef with vision and a great passion for the culinary arts, with the desire to lead a Rosette standard cooking brigade in kitchen producing consistent high quality, fresh and local produce. Candidate Attributes:

We are looking for a chef with gusto, someone willing to bring their eager enthusiasm to the table and demand seconds. We want a candidate with an appetite for a challenge to use their can-do attitude and steadfast ability to work under pressure to lead the kitchen brigade by example. A passion for local and fresh produce is a must, as well as a perfectionist’s flair for food preparation, attention to detail and presentation.

Although experience is important, the principal skill that we are seeking from a candidate is enthusiasm and attitude, with the successful applicant being blessed with oodles of both. We will invest and develop the right candidate.

Candidate Responsibilities:

  • Responsible for all aspects of kitchen management; working closely with the General Manager with the support of an established brigade
  • Daily organisation and smooth running of the kitchen(s), team direction, ensuring consistently high food quality and service standards
  • Preparing, cooking and presenting dishes
  • Creating and developing new dishes and menus
  • Maintaining a detailed knowledge of the full menu in order to explain dish descriptions
  • Stock management: purchasing, supplier relations, invoices, monthly stock audits
  • Working to the highest standards of food hygiene and following health and safety compliance
  • Monitoring portion and waste control to maintain profit margins
  • Ensuring the cleaning schedule is adhered to and cleaning tasks are delegated as appropriate
  • Ensuring all policies, procedures, standards and guidelines are carefully adhered to
  • Training and developing team members

Candidate Qualifications:

  • Experience at senior level with appropriate professional qualifications
  • Minimum Level 2 Food Hygiene Certificate
  • SVQ2 catering certificate or equivalent
  • A working knowledge of H.A.C.C.P and C.O.S.H.H
